As the global population approaches 9.7 billion inhabitants by the year 2050, humanity faces enormous challenges to feed, house and provide basic living requirements for the growing population. This is further complicated by political and economic unrest exacerbated by climate change. In order to address these issues, proper land and water management is vital to sustainable agriculture in both developed and developing countries. Furthermore, development of agriculture to increase crop production must also take into account the nutritional needs of families, especially children and infants, to alleviate hunger, malnutrition and improve health globally. Global health is not solely focused on human health, in this endeavor of feeding a growing population and improving human health, we must not forget that we are intrinsically linked to a vast network that is connected to global populations of humans, animals and ecosystems. The basic requirements of healthy living are to have access to clean water, clean food and a sanitary living environment. This applies to humans, agriculturally important livestock as well as wildlife. This dissertation outlines a One-Health/One-Medicine approach to dairy management and dairy food safety with the approach that food safety starts on the farm. Chapter One introduces the origins of One Health/One-Medicine as pioneered by Dr. Calvin Schwabe, a UC Davis School of Veterinary Medicine Professor. A historical review of dairy food safety and the path to current food safety regulations are covered. Dairy Dynamic Management is covered and its role in producing high quality dairy and ensuring dairy food safety. Finally, challenges currently facing dairy production are addressed, such as antibiotic resistant bacteria, animal health and their interconnectedness to human health. Chapter Two outlines the curriculum of Dairy Dynamic Management and its role in improving animal health, controlling mastitis and increasing dairy production in Rwanda, Africa. This curriculum focuses on managing on farm challenges to improve animal health and well being to achieve high quality milk and increased production such that farmers see an economic benefit. DDM types of strategies will be necessary to meet food security and reduce childhood and infant malnutrition. Chapter Three explores bacteriophage and endolysin use as alternatives to antibiotics to combat antibiotic resistant bacteria. Here we identify nontraditional sources and methods of isolation of bacteriophages and endolysins and discuss their use in human health, animal health and biocontrol. Chapter Four explores the development of an organic based teat disinfectant for use in organic and sustainable dairy farming. As consumers are increasingly concerned about where their food comes from and farmer practices, organic acids such as ascorbic acid and glycolic acid are appealing for teat dip formulations. Efficacy of these acids in conjunction with lysozyme was evaluated alone and in combination for inactivating mastitis pathogens S. aureus ATCC 25923 and E. coli O157:H7 ATCC 700728. Finally, Chapter Five synthesizes the results of this dissertation and the role these concepts play in sustainable dairy farming, improving One-Medicine/One-Health and future directions of this work.

An understanding of sustainability in animal production is becoming increasingly necessary since the global demand for food is expected to dramatically increase in the coming decades. In this context, raising animals for the production of food will become increasingly challenging. Dairy products have always constituted an essential component in the Mediterranean diet. In addition to their nutritional values, they represent also a part of the cultural heritage of the people. Prospects for a sustainable dairy sector in the Mediterranean, preconditions for its development and the future consumers' demand were some of the issues covered by the papers presented at the EAAP - CIHEAM - FAO Mediterranean symposium. It was organised by the Tunisian Office for Livestock and Pastures and the National Agronomic Research Institute and sustained by the Government of Tunisia, FAO, ICAR and CIRVAL. Over 280 participants from 25 countries participated. The symposium identified a variety of technically viable and scientifically sound policy options and defined the main fields requiring further scientific research and the development of new sustainable technologies. The available technologies to address intensive, semi intensive and extensive production systems and the existing institutional framework (research, education, extension systems, organisation of the sector), although requiring continuous adjustments and improvements, have proved to be in a position to meet a variety of demands and challenges. In this respect, the Symposium called for an increase in research for the semi-intensive farming systems in the South and emerging issues resulting from changes in agricultural policies in the North. It emphasised the importance of producers¹ associations as representatives of the interests of the sector and partners in the overall dialogue on policy matters and in the identification of research needs. The Symposium confirmed the wish and capacity of the dairy sector in the Region to contribute to the sustainable rural development, to the creation of new employment opportunities and to the reasonable and harmonious management of the natural resources.

The past decade has revealed unfavourable trends in e.g. fertility, udder health and locomotion in some major dairy cattle breeds due to a large increase in production and insufficient consideration of functional traits in the breeding goals. Such unfavourable trends in some functional traits increase costs. Additionally, the enlargement of herds leads to less available labour time per individual cow. This asks for cows that are easy to handle. At the same time, society is demanding a higher welfare standard of animals. These contradicting developments have increased the desire for so called more robust animals. Robustness can be defined as 'the ability to maintain homeostasis in commonly accepted and sustainable herds of the near future'; or 'the ability of the cow to function well in the environment she lives in as well as in a wide range of climates and production systems'. This book contains a series of articles (26) dealing with the concept of robustness, including aspects like evolution, genetics, environment, animal health and welfare, and integrity. Besides the major functional traits also the links to energy balance, hot climatic conditions, and the attitude and input of stakeholders towards robustness as part of the breeding program are discussed. This book is the first attempt to summarise the available knowledge concerning this topic in cattle, making this book unique. The contributions are from authors of 16 countries from all over the world. However, the focus is presently on farm animal level, while in future robustness of the whole production system may also require additional attention.
